Roasted Rossa Sicilian Tomato Soup with Fresh Herbs
Time to get cozy! The Rossa Sicilian tomatoes from Welcome Table Farm are so flavorful we just had to whip up our favorite roasted tomato soup. After a long, slow roast in the oven, the tomatoes are puréed with fresh tomato water for a salty, sweet, bright flavor that is so darn slurpable. A handful of fresh herbs makes it sing. Served with grated Comté and croutons.
