Local sweet corn, roasted poblano peppers and Yukon Gold potatoes simmer with sweet onion, garlic, cumin and Mexican oregano. Some of the corn is blended right into the broth for a velvety texture, then finished with lime, cilantro, cotija and a pinch of chile.
