Chłodnik Litewski | Chilled Beet Soup

A variety of local beets (purple, golden, Chioggia) are gently cooked and blended with buttermilk and yogurt before being joined by crisp Armenian cucumbers, radishes, scallions, and plenty of fresh dill. Bright, tangy, and deeply refreshing.
