The classic Vacherin Fribourgeois is an explosive, salty Swiss cheese still quite unknown even in France. Think of a less pressed Gruyère that has been heavily washed, developing quite impressive aromas, with animal notes, and a striking lingering length. Unlike its predecessor this cheese has the addition of peppy black peppercorns.
