This is a signature raw cow’s milk cheese from Maison Mons, immediately recognizable by its glossy black rind. Inspired by Jura cheesemaking traditions, the rind is washed with an extract of Gamay Saint-Romain grape marc from the Côte Roannaise, giving it its distinctive color and character. Supple and savory, with just enough personality to stand out on a cheeseboard without taking over.
