The celeriac has been just awesome this year from Hayshaker Farm. Even the green tops are bright and remarkable. So much so that we whipped up a little 'pesto' of sorts. Packed with celery greens and blended with loads of toasted almonds, garlic, and Parmigiano.
Use in pasta or risotto as you would use a traditional pesto.
Swirl into chicken or vegetable stock and add Maria's Caramelized Tomato & Celeriac Agnolotti for a wonderful complete dish.
Great topping for bruschetta, tomatoes, and everything in between.
