Tiny, glossy black lentils with the appearance of caviar and a surprisingly luxurious texture. Unlike common brown lentils, which often break down during cooking, these remain beautifully distinct, tender and creamy inside while retaining their shape. Their delicate earthy flavor makes them particularly good dressed with a sharp mustard vinaigrette, fresh herbs and finely diced vegetables, or served warm alongside roasted fish. Small enough to cook quickly, but substantial enough to make a very satisfying dish.
