Abbaye Ste Mère, also known as St. Paulin, is a traditional monastery-style cheese. It has a smooth, dense texture and a golden yellow washed rind, and is perfect for melting. The rind is periodically washed with brine during maturation, and the aging brings out fruity aromas and yogurt-like lactic flavors.
