This yuuki (organic) style shoyu (soy sauce) has only soybeans, wheat, water (compare that to the myriad additives and preservatives in other shoyu brands), and is fermented for many weeks. The result is a pleasant and light balance of funkiness, salt, and sweetness. Some even find there is a hint of citrus lurking in this shoyu as well.
