Umeboshi are salt-cured “ume” plums, known for their intensely salty and sour flavor. These are made from organic Nanko plums grown by the Fukami family in Wakayama since 1940, without pesticides or fertilizers. The plums are cured with red shiso and Hyogo sea salt, then aged in barrels for a year using traditional methods, with no additives or preservatives.
