Produced by the fourth-generation Fukami family farm in Wakayama Prefecture, Japan’s famed ume-growing region, this organic umesu is the pure liquid extracted during the making of umeboshi plums. Made with only organic Nanko ume plums and sea salt, the golden-hued seasoning is filtered over six months with no added water, resulting in a deeply tangy, salty, and savory condiment packed with bright acidity and concentrated umami. Excellent in vinaigrettes, marinades, cocktails, or anywhere a splash of briny citrus-like lift is welcome.
