The goats for this exquisite cheese graze among chestnut trees, their milk then of course made into that cheese that is then is aged on chestnut planks. The rind is light grey with yellow blooms, and holds the aromas of the woods and foraged nuts. The paste is perfectly balanced, barely sweet, lightly tangy, and will convert any goat cheese skeptic into a believer!
