This Thai yellow curry powder is made with; turmeric, cumin, coriander, galangal, white pepper, chili powder, mustard powder, fennel, lemongrass, fenugreek, cloves, kaffir lime leaf.
Mix shrimp paste with curry this powder (1tsp shrimp paste for each,1tbsp curry powder) and enough water or fish sauce, and make a paste-like consistency.
Use this paste to marinate your meat or tofu briefly or add the paste to the pan to fry when the veg/meat/tofu is browned in the pan. Then add the coconut milk and reduce. Finish with a spoonful of brown sugar. Quick and delicious curry is ready!
