Fresh local tarragon gives this butter its wonderfully fragrant, slightly anise-y flavor. A natural with chicken and fish, melted over green beans or carrots, tucked into an omelet, or used to finish a pan sauce. Also particularly excellent melted over a steak with a pile of crispy potatoes.
