Ahhhh...the monk's head shaped cheese! This intensely aromatic and extremely delicious Alpine cheese is the oldest of Swiss cheeses. Shaved in house on a girolle (that tool thingy shown in the picture). Tete De Moine is shaved into glorious rose buds for your enjoyment.
