Sumac is used as a spice in Arabic, Persian, and Lebanese cuisine to add a tart, sour lemony taste.
Used in the spice mixture za'atar. Used as a rub for grilled meats or kebabs; as a flavoring in soups & stews, sprinkled on fish, chicken, vegetables, and rice dishes; added to salad dressings, marinades, casseroles, dips; and many other dishes for additional sour lemony taste.
It can also simply be used on the table as a condiment such as salt and pepper.
Think of sumac as a substitute in any dish on which you might squeeze fresh lemon juice.
