For this bar, Cuna de Piedra uses a cooperative in the Raymundo Enríquez ejido, made up of 28 members who own 50 hectares of cocoa, lands where you can also find other fruit trees such as lemon, coconut, mango, mamey, pineapple and tropical flowers. This cooperative maintains uniformity during the harvest season since they only collect cocoa beans from those who are members. By doing this, harvest after harvest, they compensate for the genetic diversity that exists on their farms by knowing exactly the lots that ferment at the same time.
