This is a fantastic ricotta. This ricotta starts with the rich, whole Jersey cow milk produced on Bellwether Farm's neighbors’ farm. They first culture the milk to bring out its delicious flavors and then slowly heat each batch in small kettles until the curds form. Sold in their original draining basket, this unique ricotta is known for its pillowy texture.
