From Lombardy in northern Italy, Gelmini's mascarpone is made from fresh Italian cow's milk and cream. Unlike traditional cream cheese, mascarpone is made without rennet, giving it an exceptionally smooth, velvety texture and a delicate, naturally sweet cream flavor. Essential for a proper tiramisu, but equally wonderful stirred into risotto, folded into pasta sauces or spooned over fresh fruit. A little goes a long way toward making just about anything more luxurious.
