A small, reddish-brown heirloom with a history rooted in the agriculture of the Hidatsa people of the northern Great Plains. For generations, Hidatsa farmers cultivated beans alongside corn and squash, developing varieties suited to their climate and food traditions. Rancho Gordo has worked with Nueta Hidatsa Sahnish College in North Dakota on efforts to preserve and restore traditional seeds. Hidatsa Reds are small, thin-skinned and wonderfully creamy, producing a flavorful broth despite their modest size. A bean with a remarkable agricultural story and an equally appealing place in the kitchen.
