Marbled soft blue cheese from Lombardy region in Italy. It is made with pasteurized cow’s milk from just one milking session. The addition of natural enzymes and selected Penicillium molds turn it into a delicious young blue cheese. Gorgonzola Dolce is in fact a young version of Gorgonzola cheese with an ivory paste and greenish mold. The cheese is incredibly soft, silky, moist, sweet, and very creamy with light mineral and salty note. The older version of Gorgonzola (Gorgonzola Piccante) develops bluer molds and more assertive and slightly spicy flavors.
