Freekeh is roasted green wheat, a traditional staple of the Middle East and Northeastern Africa with origins dating back to 2300 B.C. in the Eastern Mediterranean. According to legend, early green wheat was accidentally scorched during an attack, then rubbed clean and discovered to be not only edible but deliciously smoky. Today, freekeh is prized for its subtle smokiness and pleasantly chewy texture, adding depth to salads, soups, and grain bowls.
