Sauternes is the sweet wine appellation in Bordeaux France, where the grapes are Semillon and Sauvignon Blanc. Harvest is done very late in the fall after the grapes have shrivelled and been 'attacked' by the noble rot, botrytis cinerea. Besides helping shrivel the grapes, botrytis adds a flavour much like candied pineapple. Sauternes are thick and sweet and make a perfect apertif or dessert wine.
