Small, dense and exceptionally velvety, Buckeye beans are among Rancho Gordo's staff favorites. Their compact size and ability to retain their shape make them particularly appealing in soups and salads, but the real attraction is their deeply flavored cooking broth. These are beans that reward uncomplicated preparation: a little onion, garlic, olive oil and salt, with good bread for soaking up every last spoonful of broth.
