A blue cheese from Auvergne made from pasteurized cow’s milk. The term “La Memee” means Grandma in French and reflects upon using a traditional recipe and the resulting great flavors. This is a mild and creamy blue cheese with evenly spread blue mold and just enough sharpness. This blue mold is not injected like in the making of Roquefort cheese. It grows naturally through small needle holes pierced vertically into the cheese. The result is in very pleasing, but not overpowering, mineral and salty notes that add complexity to the creamy and milky paste. Aged over 2 months.
