Barberry is edible, refreshing, but sharply acidic berries, used in cooking for its pleasantly acidic taste and fruity aroma. Widely used in Persian, Iranian & Afghani cooking, as a flavoring for soups, rice dishes, stuffing & chicken dishes.
Soak barberries in cold water for 10 minutes before use. Drain, and sauté in a little oil until they swell.
They add a bright flavor to Persian rice and roast meats.
Barberries add intense flavor to jams and chutneys and can also be used in baked goods like bread, fruit cakes, or muffins. They pair well with saffron and orange.
