- Amchur powder is ground sun-dried slices of raw mango.
- It is acidic & tart and has a slightly spicy flavor of unripe mango. Amchur is used as a souring agent. It is also used in spice blends. It gives food a tangy, tart, slightly sour taste with a tropical fruity aroma to all Indian dishes.
- Usually added in the food a couple of minutes before take it off the heat.
- Can be used instead of Lemon juice: 1 teaspoon of Amchur powder for 3 tablespoons of lemon juice.
- Wake up a chickpea curry or dal with a hit of this at the end.
